A three man booth can work well if the people involved play off eachother well enough and provide enough contrast from one another.
If you want it to work, I suggest one straight play-by-play man, one for outspoken/heel color commentary and one for neutral observations/anecdotes. All three people need to know their roles in calling the match and not constantly willing to talk over one-another.
What's also important is chemistry. You need to be comfortable with the people you're "at the table with", especially in a three-man setup. Otherwise it'll become chaos.
I was a third commentator on two SWF matches this past year. Despite some awkwardness at first, we made it work. It's not impossible, but you need to know exactly what you're doing. That means you need to know the people you're working with and pre-plan. I don't suggest doing it with strangers unless you somehow hit it off.
